This is the Hard to Find specialty cut that is a staple in the Southern California area. If you know this cut, there is nothing to say, If do not, this is a must try !! This cut comes from the bottom sirloin. It is not common in the grocery stores because it has to be hand cut and thus only custom, hand butchers have it !
