Vietnamese Ground Pork

Ingredients

  • 1 1/2 tbsp cooking oil

  • 1/2 onion , finely diced (brown, white or yellow) (~1/2 cup)

  • 2 tsp grated ginge

  • 2 large garlic cloves , crushed (~2 tsp)

  • Thai chili pepper , deseeded and finely chopped or (SUBSTITUTE: 1/2 teaspoon crushed red pepper flakes)

  • 1 lb Open Pasture Meats heritage breed pastured ground pork 

  • 5 tbsp brown sugar

  • 2 tbsp fish sauce

  • 1 shallot/scallion stem, sliced diagonally across the stalk about 1/4 of an inch in length

Instructions

  • Heat the oil in a large skillet over high heat.

  • Add the onion, ginger, garlic and chili and cook for 2 minutes.

  • Add the Open Pasture Meats heritage breed pastured pork and cook for 3 minutes or so until white all over, breaking up the meat with a wooden spoon.

  • Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts to caramelize - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelization. Repeat twice more until caramelized to your taste.

  • Serve over rice, garnished with sliced scallions/shallots.

A side note, place this in a leaf of Iceburg lettuce for a phenomenal lettuce wrap or serve with a side of rice for an authentic taste of Asia !
