Authentic Beef Stew - the Healthy Way

This recipe easily feeds a family of 4 and will feed up to a family of 6. We prepared ours in a cast irom pot but this is easily done in a crock pot for a hassle free, done when you gt home filling meal.

Ingredients:

1 pound of Open Pasture Meats Beef Stew

1 Quart of Open Pasture Meats Organic Beef Broth

1/2 pound of carrots

1 pound of potatoes

1 can of diced tomatoes

1 can of tomato paste

2 medium yellow onions

3 green or red peppers

2 tablespoons of parsley

2 tablespoons of oregano

1 tablespoon of cumin

3 cloves of garlic

3 tablespoons of olive oil

  1. Place the Open Pasture Meats stew beef into a panthat has been preheated to medium high and has 2 tablespoons of the olive oil in it. Sear and brown the stew beef.

  2. Remove the stew beef from the pan and drain off any liquid. Add the remaining tablespoon of oil oil to the pan and then add the crushed orminced garlic, the onions (large diced) and peppers. Cook until the onions are translucent.

  3. Add the stew beef and the onions, peppers and garlicto the pot. Then add the tomatoes, tomato paste, cumin, oregano, parsley, carrots and the Open Pasture Meats organic Beef Broth. ( if you are preparing in a crock pot add the potatoes. )

  4. Cook for 6 to 8 hours on low.

Serve in a bowl with a bread on the side for a soul warming, filling and delightful dinner.
